Sugo Pasta, Glascow, UK
We were called to Glasgow to help the company maker of Paesano Pizza to set up their new opening restaurant focusing only on fresh pasta. The visionary dream of Paul, the owner of Paesano Pizza e Sugo Pasta was to have every Glaswegian to eat a bowl of pasta like you get served in Bologna.
We helped Sugo Pasta creating a menu that would fit the purpose of serving up to 1700 people per day. Train their stuff in using extruders and how to handle, prepare and store correctly fresh pasta. We also focused on passing the knowledge to their chefs on how to make every single dish from scratch only using the best ingredients and in the Italian traditional way. We then worked together with their kitchen team and restaurant manager to create and adapt a staff and food management system that would keep costs in check and reduce wastage.
Pasta Evangelist, Harrod’s
We were hired to train Pasta Evangelist staff on how to correctly prepare and handle fresh pasta and how to handle costumers in their concession shop at Harrod’s luxury department store, in London. We also created and implemented a food and products management system for their shared space in the harrod’s refrigeration area. We still collaborate with Pasta evangelist for online fresh pasta classes.
New pasta restaurant concept
We are currently developing a pasta restaurant concept for a new business in Covent Garden in London. For this client we are designing their kitchen space, menu, training their staff and the opening.
